Think you can have a green school without some greens in the kitchen? Schools are used to bringing home the bacon; that’s why it’s important to remember to include the cafeteria in any greening activity. Over 30 million children eat at least one meal a day at school! That’s one-tenth of our entire country! If you have never had school food before, you at least know the standard old routine: pizza, burgers, fries and soda. Throw in the occasional unhealthy snack from the vending machine, and that’s the common food experience of millions of schoolchildren daily. With almost 20% of global carbon emissions originating – in one way or another – from the global food system, greening your food supply and cafeteria is a must to fully become a “green” school. And while you are switching soda for 100% fruit juice or water (go figure!), don’t forget to give your teachers a fresh, local and organic apple for their support!
